The vineyard
Wine obtained from grapes from the Giaroni area, the Merlot harvested in advance to preserve the acidity after being crushed the must is left to macerate for 20 hours with the skins to allow the color to be extracted.
Production
Durello Lessini Doc Brut derives from a first fermentation that takes place in steel tanks at a controlled temperature, while the second fermentation in an autoclave is at low temperatures with selected yeasts, according to the Charmat Method.
The fine and persistent perlage is given by the second fermentation in an autoclave lasting five months.
